The Ingredients
- 4 medium-sized apples
- ½ lemon, juice and zest
- 200 g flour
- 300 ml Schneider Weisse TAP1 “Meine helle Weisse”
- 2 eggs
- 1 pinch of cinnamon
- 1 tsp vanilla sugar
- 1 pinch of salt
- 20 g sugar
- 40 g brown butter
- oil for deep-frying
The Recipe
- Separate the eggs. Stir the flour, beer and egg yolks until smooth, then add the lemon zest, cinnamon and vanilla sugar.
- Finally stir in the warm brown butter.
- Beat the egg whites with salt and sugar until stiff. Gently fold the egg whites into the batter.
- Peel the apples, core them and cut the apples into 1 cm thick rings. Immediately drizzle with lemon juice.
- Dip the apple rings in the beer batter, let them drain briefly and deep-fry in hot oil until golden.
