Refreshing cider recipes for summer

Cider is far more than just a fruity alternative to beer. With its refreshing taste, it is not only suitable as a summer drink, but also excellent as an ingredient in the kitchen or as a base for creative cocktails. Especially on warm days, cider recipes provide a pleasant refreshment and bring variety to the glass and the plate.

Cider as a versatile cooking ingredient

The versatile use of beer in cooking has long been known. But cider is also excellent for refining dishes. Its fruity apple notes give sauces, braised dishes and marinades a special aroma.

Especially in summery cooking, cider adds a light and fresh note.

Provençal cider chops

Cider has its roots in present-day Great Britain. Apple cider was already being produced there in Roman times. The combination of fruity cider and Mediterranean ingredients therefore works surprisingly well – as this hearty recipe shows.

Ingredients

  • 4 boneless pork chops (approx. 300 g each)
  • 80 g hard cheese (e.g. Comté)
  • 80 g cooked ham
  • 2 cloves of garlic
  • 500 g potatoes
  • Shallots
  • Butter
  • Thyme
  • Herbes de Provence
  • 200 ml cider
  • Optional: apples

Preparation

  1. Cut into the chops and fill with finely cut cheese and ham.
  2. Sear in a roasting pan with butter on both sides for about two minutes each.
  3. Remove the chops and set aside.
  4. Fry potatoes, shallots, garlic and herbs in the roasting pan.
  5. Deglaze with cider and return the chops.
  6. Braise in a preheated oven at 200 °C top/bottom heat or 180 °C fan for about 90 minutes.
  7. After about an hour, add quartered apples to taste.
